This smokey Eggplant Bharta is chefs favorite side dishes to have. It’s easy to pack in a lunch box. We make it a very traditional way, grill for natural smokey flavor and then cooked with an onion-tomato base and home ground spices. Serve as a chutney on the side goes very well with dahi, dal tadka, and roti which makes a perfect meal.
